Vegan Banana Bread

I've been searching for a good vegan banana bread recipe for some time now and I think I found one I like! I found the recipe here and am actually looking forward to trying some of her other recipes as well. Today while Bailey was at school, my little baker and I made a couple of loaves and they are really delicious!

Dairy, Egg and Nut Free Banana Bread

Make sure your bananas are nicely browned, because very ripe bananas produce the best breads. Make one for now, and freeze the other for later.
Yield: 2 loaves

1/2 cup dairy-free margarine
1 1/3 cups granulated sugar
1 1/2 cups mashed ripe banana
3 tablespoons water
2 3/4 cups unbleached all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup dairy-free buttermilk (1 c. of soy milk mixed with 1 T. vinegar. Let sit 5-10 minutes)
Preheat oven to 350ºF, and spray two 8-inch baking pans with dairy-free baking spray.
In the bowl of a stand mixer fitted with the paddle attachment, combine margarine, sugar, bananas, and water. In a medium bowl, combine flour, salt, and baking powder with a wire whisk.
Alternate the flour mixture with the buttermilk, starting and ending with the flour mixture. Pour into prepared pans, and bake 50 to 60 minutes, or until cake tester comes clean.

Cool completely before slicing

"Builder Hero"

Tonight while we were having dinner Bailey was telling me how Daddy was her hero - her "Builder Hero!" Well, a three day weekend has come and gone and we have progressed on our counter project! Whoo hoo. (Can you hear me cheering loudly?) Today Clark spent most of the day cutting tile and fitting pieces together like a great big puzzle. He may actually start pasting them down tonight?

After inhaling a ton of cement dust, Daddy finally decided to get a mask today

I should've taken a photo after his face dried so you can really get the effect. Quite funny!

One side of the counter

Little corner area. I think it's going to look nice with our cabinets.

I'm mostly excited about this extra 12 inches added to our counter for a little breakfast bar!
Cross you fingers and pray we'll have finished project pictures next weekend! :)

Updates

The kids and I are getting over being sick with something for the last couple of weeks, but we've been plugging along. Here are a few things we've been up to!

Bailey was SO EXCITED the day her sea monkeys hatched she wanted to take a photo with them! They all died a couple of days ago...very sad, but we're thinking our house is just too cold for sea monkeys. We'll try again in the summer.

Our new project! We are working on tying knots! We went shopping for fleece to make a hat, but Bailey decided she wanted to make a blanket instead. Now we are working on tying knots all the way around. It's taking a bit of time, but it's good practice for her and she loves the blanket!

Gregory practicing making snow angels for our upcoming trip to the SNOW!

They told me to take a picture of their "family." Gregory is the Daddy, Bailey is the Mommy and Santa baby is, well, the baby

Our kitchen...Clark is spending all his free time working in the kitchen. We're hoping to get to the tile tomorrow. Keep your fingers crossed!!

Here's our new sink! Actually we have no sink at the moment, but this will be our new sink! I love it. It's one big huge pit. No more struggling to wash our pots.

Kids trying on their new snow clothes! They are very excited for our trip next month! Who knew getting ready to play in the snow for a few days would be so much work!?

They've never been to the snow so this will be quite a fun experience for them.

Our snow bunnies

Bailey is looking forward to making a snowman, a snow angel and going down the hill in a sled!

Clark's dream has come true...the little man wants to ski! Can you just picture him flying down the mountain? I think he needs to wait until he has a little fear built in.

Our New Pets!

Guess what Santa brought the kids this year!? SEA MONKEYS!! I'm probably dating myself, but remember Sea Monkeys? Well, now our kids will remember them too. Monday we conditioned the water and yesterday we stirred in the eggs. With our cold weather it'll probably take 5-7 days for them to hatch, but we are all looking forward to watching them grow. (They live up to 2 years!) They also received a Ladybug Farm and an Ant Farm so we're going to have quite a little zoo around here.

Happy 2010!

We had a fun filled day in Stockton yesterday and brought 2010 in with lots of food and laughter. We had ozoni (New Year's soup), lots of tasty treats, played football, pictionary, drew lots of pictures, chatted and just had another great New Year's Day.

We wish you all a 2010 filled with healthy, happy days!
