Chicken Pot Pie

Today Bailey helped me with dinner. We made chicken pot pie! We made the filling, added the crust and decorated the top. She crimped the edges quite nicely and added our chicken and heart decorations to the top. She was so proud of her work, and as a daughter of a blogger, she said, "Mommy, get the camera so we can take a picture!". Of course I couldn't miss a photo op of our first pot pie we made together!

Chicken Pot Pie

2 chicken breast, chopped into bite-sized pieces
2 carrots, diced
1 onion, diced
1 sweet potato, diced
2 ribs celery, sliced
2 cloves garlic, chopped
frozen peas

Stir fry chicken, carrots, onion, celery, garlic and sweet potato. Simmer until veggies are tender. Add frozen peas.

Sauce
¼ c butter
¼ c flour
1 t salt
dash of white pepper
2 c milk ( or 1 c milk and 1 c chicken stock – I do 2 c chicken stock now since Bailey can't have milk)

Melt butter in a saucepan over low heat. Blend in flour, salt and a dash of white pepper. Add milk/chicken broth all at once. Cook, stirring constantly, until mixture thickens and bubbles.

Mix sauce with chicken mixture. Put in oven proof dishes or pie plate. Top with Pillsbury ready made pie crust.

Bake until crust is brown at 350° for about 30-40 minutes
